Meatball-Stuffed Garlic Knot Football

Soft, golden-brown garlic knots are stuffed with juicy Simek’s Meatballs, brushed with garlic butter, and baked into a football shape. Served with a side of warm marinara for dipping, this fun and shareable dish is the MVP of any watch party.

INGREDIENTS

FOR THE ROLLS

  • 1 pkg of your favorite Simek’s meatballs
  • 2 13.8 oz cans of pizza crust
  • ½ tbsp milk OR 1 egg
  • Flaky salt

FOR THE GARLIC HERB BUTTER

  • 4 tbsp butter, melted
  • ¼ cup finely grated parmesan cheese
  • 2 small cloves of garlic, minced
  • 1 tbsp chopped parsley
  • 1 tbsp chopped basil
  • Salt & pepper to taste

TO SERVE

  • Marinara sauce for dipping
  • 1 stick of string cheese or cheese of your choice

Directions

  1. Remove your package of Simek’s meatballs from the freezer 30 minutes before you are ready to start to let them thaw.
  2. Preheat oven to 400F and line a baking sheet with parchment paper.
  3. Unroll each pizza dough and use a knife or pizza cutter to divide each dough into at least 32 pieces. Try to get each piece of dough to be about the same size to ensure they bake evenly.
  4. Use your fingers to press each piece of pizza dough into small rectangles. Then, add a meatball in the middle and wrap the dough around it. Pinch the dough closed and roll it into a ball.
  5. Place dough balls seam side down on the prepared baking sheet in the shape of a football. The outer rim of the football should use about 16 dough balls, and the remaining will go in the middle. Make sure they are touching but not too cramped.
  6. Brush milk (or whisked egg) over the top of the dough balls. Sprinkle with flaky sea salt, if using. Transfer baking sheet to the oven and bake for 18-20 minutes, depending on your oven. Then, switch the oven to broil and broil for 2-3 minutes until the tops of the rolls are golden. Let the rolls cool slightly.
  7. In a medium bowl, mix the melted butter, parmesan, garlic, parsley, basil, salt & pepper. Then, brush this mixture over the top of the rolls.
  8. Cut the stick of string cheese into thin rectangles. Arrange them on top of the rolls to mimic the look of football laces.
  9. Serve with some warm marinara. Enjoy!
